Garlic, like shallots and onions, is a member of the allium family and is a species within the allium genus. Garlic is one of the most popular vegetables used to season in cooking. Studies have shown there are many benefits to adding garlic to your dishes. Garlic is easy to grow and is a great addition to your edible garden. Asiatic garlic is also known as 'softneck garlic' (allium sativum var. sativum). It is called 'softneck' due to its flexible, non-woody center stalk (scape) that does not produce a hard flower stalk or bulbils (flowers). Asiatic garlic bulbs tend to be smaller and may have more cloves per bulb than other varieties. The taste is milder and less spicy, with a sweeter or nutty undertone. It is easy to peel, and a preferred choice for storing for an extended time. Can easily be grown in colder and warmer climates, particularly in climates where hardneck varieties do not perform as well.
